Leche Flan

I got this recipe from a former co-worker... the tastiest, creamiest flan I've ever had. It doesn't always come out just right, but when it does, it is delicious!

Mother's Day Mexican Dinner

LECHE FLAN

1 can evaporated milk
1 can sweetened condensed milk
3 eggs
1/2 tsp vanilla
*optional flavorings: orange or lime rind

Caramel base:
1 cup white sugar with a little bit of water

Preheat oven to 350 degrees.

In a large bowl mix evaporated milk, condensed milk and eggs. Set aside.

Melt sugar until caramalized. Pour sugar into ramekins of other baking dish, enough to cover bottom.

Pour milk batter to desired amount. Cover with foil. Place ramekins (or baking dish into a large baking dish with a few inches of water.

Steam-bake approximately 30-45 minutes or until consistency of jello. Cool, then place in refrigerator. Serve chilled with caramel side up.
